Pork Ribs
Thick cut St. Louis style ribs are dry rubbed in Meat’s special spice mix and left to smoke for hours.
They are then pulled and set up to be steamed for another few hours. Don’t worry, we always have napkins and paper towels for you while you go elbow deep into your meat Nirvana
SmokeD Sausage
Looking to stay neat while you eat?
Meat’s sausages are bought locally from the North Fork and are given the Meat treatment. They’re placed in the smoker where they are smoked halfway, and then flipped to ensure they develop a fill smoke flavor while retaining the snap of the casting.
Pulled Pork Sandwich
All killer, no filler.
These pork shoulders are hand dressed for greatness as they receive a coating of that Meat’s special rub and placed in the smoker for several hours. While this happens, the juices from the pork is collected to ensure maximum juiciness. Hand pulled, the meat receives no sauce because well…it's just that damn good. If you want sauce just ask and we will provide you with the house made BBQ sauce. Served on locally served buns, your meat will be topped with pickles and onions and many, many napkins
Smoked Brisket
This meat is so prized that Meat designed a separate rub just to compliment the beef.
The proper treatment of this wonderful cut of meat leaves a perfect, picturesque smoke ring that demonstrates the control of our pit-master has over smoker. Served in slices, or on one of our locally baked buns, the demand for brisket tends to outweigh the supply. This special goes quick, so come early or you’ll be left out in the smoke!

Bacon Jalapeño
Mac & Cheese
We have seen friends fight over the last bite of our Mac and Cheese.
Designed for both kids and adults, the jalapeño are seeded prior to making the dish lowering their heat levels, while maximizing their flavor contributions to the dish. Coupled with a copious amount of bacon and homemade cheese sauce, this dish will complement any of our meat selections.
Brisket baked Beans
Made with four different kinds of beans, onions, and peppers, our beans are combined with pieces of the crown jewel of any good barbecue, brisket!
Used as a topping, or eaten on the side, the heartiness of the beans is perfect to round out any of our meals. Just make sure you don’t have a long car ride with close friends afterwards

Pork Belly
The latest creation from the Meat Laboratory.
Meat scores the belly in a checkerboard pattern, and rubs every nook and cranny with a very special dry rub, and smoked to break the meat down into the most glorious nuggets imaginable. Made only in exceptionally small batches for the most special of occasions. You have been warned, forks and napkins are a must, unless you don’t being coated in that sweet meat residue.

With a little over a pound of meat per rib, few people are able to handle the glory of the beef rib.
This piece of meat best exemplifies the talents of our put master, as you can see the thickness of our smoke ring around the final product.

Served tall with sauerkraut and Meat’s Special Sauce, we suggest its best enjoyed slow, preferably in your comfy chair.

You’ll receive a sampling of all of our meats for the day in one glorious tray of happiness. Sides are not included because, let's face it, if you can finish the meat, you won’t have room for anything else. Before ordering, make sure your schedule is clear because between the meat sweats and the urge to nap, you day is pretty much over.
